Summer is still a long way but the sunny weather from the past few weeks here in Nice, has really put people in a happy mood, eager to enjoy life outside of the house.
In my case, a blue sky and plenty of sunshine makes me want to jump in the kitchen and prepare dishes with plenty of vegetables or fruits. That's why I started craving for a cherry clafoutis earlier today.
But as we can not find any fresh cherries at this time of the year, I have tried a clafoutis that you can make all year round namely with pitted sour cherries out of a jar. And for sure, it was a great success! Those cherries have been stored in a sugary juice and will give an extra kick to this dessert.
Slighty warm, light and puffy and at the same time the right balance between sour and sweet ... a nice sour cherry clafoutis with coffee for dessert or even breakfast... hmmm...but let's stop daydreaming and let's start baking!!!!

Ingredients:
50gr sugar
4 eggs
1 tsp vegetable oil
125gr flour
250ml milk, warm
dash of salt
350gr sour cherries, from a jar, drained, pitted
butter, for greasing oven dish
350gr sour cherries, from a jar, drained, pitted
butter, for greasing oven dish
icing sugar (optional)
1. Preheat oven to 190°C
2. Whisk together sugar and eggs
3. Add oil and flour and stir well
4. Add warm milk and a dash of salt, whisk gently until smooth
5. Butter the oven dish and spread cherries evenly in dish
6. Slowly pour batter mixture on top of cherries
6. Place dish in oven during 30 to 35min.or until batter is puffy, firm and golden brown
Let cool for 5min. and sprinkle the top with some icing sugar.
Serve warm. Enjoy!



I have made so many variations of clafouti to date, and I have yet to try the traditional cherry. Using pitted jarred cherries is brilliant!

ReplyDeleteHi Donna, I have to admit I bought the jarred sour cherries in a rather small shop, here in the South of France, they did not have any other varieties. I can't really remember what was written on the jar but I will have a look and get back to you after my shopping trip on Saturday. :-) Hope you are having a great time in France
