Little chocolate rocks with crushed almonds

Looking for easy chocolate sweets you can keep in the fridge for a few days and which go well with a hot cup of tea or coffee? Well, these little chocolate rocks are a nice little treat. Extremely crunchy with a subtle hint of sweet chocolate and almonds.
Only 3 ingredients, ready in no time, require no baking but just some chill time in the fridge. And this chill time, the waiting, is the hardest part! ;-)

In one of previous chocolate posts, Pink hot chocolate, I have already mentioned that I am a big fan of white chocolate, but of course these little rocks can also be prepared with milk or dark chocolate, in the same manner. The same goes for the almonds, they can be replaced by crushed hazelnuts or walnuts.

Makes around 25 bite-size chocolate rocks

100gr (3.5oz) white chocolate 
50gr (1 2/3cup) cornflakes
25gr (1/3cup) almonds, crushed

1. Melt chocolate in a bain-marie over very low heat
2. Add crushed almonds to melted chocolate, stir well
3. Add cornflakes to chocolate mixture, stir carefully to coat cornflakes
4. Place spoonfuls of chocolate mixture in little cupcake liners or on baking paper.
Let the little rocks chill in the refrigerator for at least 2 hours or until they are crunchy and no longer sticky.
