Ham and herb cheese appetizer

Having some guests over for dinner this weekend and you want to offer an aperitif but do not know what to prepare without spending too much time in the kitchen??? How about this light delicious appetizer with just 3 ingredients, ham, herb cheese and cucumber.

When preparing appetizers it is always good to keep in mind what kind of main course you will be preparing. You do not want to serve appetizers which spoil the appetite, that is why I often opt for cucumber, salad or endive leaves instead of toasts to serve my appetizer on. At the end of the day, it's all about the toppings.
In this case I have used a simple combination of sliced ham, with a subtle, more neutral taste, combined with some strong flavoured herb cheese on top. A nice refreshing appetizer, lovely with a glass of wine!






Ham and herb cheese appetizer
Makes ± 20

Ingredients:
1/2 cucumber
1 slice of ham
10 tsp herb cheese (like 'Boursin')
1 tsp dried parsley (optional)

1. With a potato peeler, remove randomly some strips of skin of the cucumber to reduce some of the bitterness; slice cucumber in 5mm (0.2 inch) thick slices
2. Slice ham in little strips, place little piles on top of each cucumber slice
3. Place now half a teaspoon of herb cheese on top of each little pile of ham
Top off with some dried parsley, if desired.

    I often make small open sand (crositni like) with cucumber, smoked salmon and few drops of Dijon mustard/honey mixture. Ko

    1. Indeed, salmon and cucumber is very refreshing but I have never tried the mustard/honey mixture. Will have to give this a try soon!
