Preparing some grilled meat or fish and in the need of a simple but tasty salad? How about sliced zucchinis with crumbled blue cheese?!
Indeed, another easy recipe ready in 5 minutes. A salad which doesn't only bring some fresh colours to your plate but also a great, crunchy taste. A combination of raw vegetables with warm toasted pine nuts and the strong flavour of blue cheese. As there are already plenty of tastes and texture, this salad / side dish goes best with a simple dressing to keep it all natural.

Zucchini salad with blue cheese
2 Servings
Ingredients:
35gr (1/4 cup) pine nuts, toasted
1 zucchini (courgette), medium size
1 zucchini (courgette), medium size
1/2 red bell pepper
50gr blue cheese, crumbled
50gr blue cheese, crumbled
Dressing:
3 tsp olive oil
1 tbsp lemon juice
salt and pepper to taste
For the salad:
1. Spread pine nuts in a small ungreased frying pan and fry over medium to high heat, stir occasionally, until golden brown
2. Slice zucchini and bell pepper very thin with a potato peeler and spread them out on a plate
3. Divide crumbled blue cheese and toasted pine nuts on top of sliced vegetables
For the dressing:
4. Combine olive oil, lemon juice, salt and pepper and stir until smooth
5. Sprinkle smooth oil mixture on prepared zucchini salad.
The salad is ready to be served with grilled meat or fish as a fresh and crunchy side dish!
Enjoy!
Tip: Do not slice the zucchini too long in advance as the zucchini will start to 'sweat' and might affect the crunchiness of the other ingredients.

Very interesting! I haven't had raw squash salad, and what a pairing with the blue cheese dressing :)
