Delicious chicken brochettes

I remember going to Greek restaurants with my parents when I was little. I used to be a very bad eater, cooking for me was a nightmare because there where so many things I didn't like to eat, let alone try. Onions were definitely not one of my favourites, but every time at the Greek restaurant we used to order souvlakl's of different types of meat and they were always served with sliced, raw onions on top, to give that little extra flavour to the brochette. And indeed, these days I will eat about anything and enjoy all types of food and this taste is something I have been looking for, for a long time. I can not imagine to cook without onions, they are such a great ingredient and offer such an amazing taste to almost any savoury recipe. I have been trying to recreate this taste and would love to share it with you all. It is a great little recipe which will please many of you, specially on a hot summer's night, accompanied with any rice, potato or even salad dish.
 









Delicious chicken brochettes
4 Servings

Ingredients:
4 chicken breast fillets

1 yellow onion, sliced up thinly
Marinade: 
2 tbsp olive oil
4 tbsp white wine, any cooking wine will do
1 garlic clove, crushed
1 tsp oregano
pepper and salt to taste
wooden skewers, soaked in water during 20 minutes


1. Cut the chicken breasts in 2cm cubes and place them in a bowl
2. Mix the marinade ingredients and toss them well with the cut up chicken breasts
3. Let the chicken marinade for an hour, in the fridge, before further use
4. Thread chicken onto skewers
5. Grill the brochettes in a grill pan on your stove or on the barbecue until the  meat becomes white and has a nice golden colour (between 10 -15 min)
6. Once the meat is done, serve the brochettes on a plate covered in sliced onion rings.
