Yes indeed, I still have lots of nectarines in the kitchen. A nectarine cake is one way to go but a much easier dessert and definitely a healthy one is soft white cheese (0% or not) with on top a nectarine coulis. I think more simple than is, is difficult to imagine and it even presents nice in a simple glass at the end of a meal. Actually I even eat it for breakfast. It gives me the necessary energy and vitamins to start my day! The tangy taste of the cream cheese together with the sweet and soft nectarine blend is just lovely!!
Fromage blanc with a nectarine coulis
2 Servings
Ingredients:
200gr soft white cheese (I used 0% fat)
2 small nectarines, rather soft
sugar to taste (optional)
sugar to taste (optional)
some mint leaves, decorative
1. divide the soft white cheese in 2 glasses
2. Wash the nectarines, cut them up and blend them until smooth. Add sugar if necessary.
3. Divide the nectarine coulis over the 2 glasses and add a little bit of mint to give that extra colour and flavour.
