Easy nectarine cake

As this afternoon the weather is not so good here in the South of France, I have decided to skip the beach and to prepare something to accompany my coffee at 4 o'clock ;-).
I recently bought so many nectarines that, of course they were not all eaten while they were still nice and crunchy, so some of them turned out to be so soft that I decided to look for a cake recipe. And here is where I have found my inspiration. Although the recipe states 30 to 40 min, in my case the baking time took closer to 50 min. The reason might have been the shape of baking tray. 





Easy nectarine cake
 
Ingredients:
170gr all-purpose flour

12gr baking powder
1,5gr salt
75gr butter, melted
80gr confection sugar
2 eggs
70ml oil 
7,5ml vanilla extract
2 nectarines, cut into small pieces (when the nectarine is ripe you do not have to peel the nectarine)


1. Preheat the oven to 175 degrees C
2. Butter a baking pan, dust the inside with flour
3. Whisk the flour, baking powder and salt together
4. With a mixer, beat the butter until it’s soft, add the sugar then  the eggs, beat in the oil and vanilla and finally add the dry ingredients
5. Bake for 40 to 50 minutes until the top is golden brown
6. Once baked, let it cool for 10 min, sprinkle the top with some sugar powder and the cake is ready to be served.
