Mascarpone is such a delicious creamy cheese for desserts. The most common recipe is of course the traditional tiramisu with coffee and liquor. But this time the layers are made by a red fruit coulis instead of finger biscuits. The combination of sweet and slightly sour is just divine! Give it a go, it is an easy recipe and after a rest time of just an hour you can let this dessert melt in your mouth. ;-)
Red fruit tiramisu
6 ServingsIngredients:
250g mascarpone
75g sugar (50g + 25g)
3 eggs
1/4 grated lime zest
150g of red fruit (strawberries and raspberries)
8 biscuits (preferably Digestives, also used for Cheese cake)

1. Combine the mascarpone, 50g sugar, 3 egg yolks and the grated lime zest and stir well until smooth
2. In a separate bowl, beat the 3 egg whites until foamy
3. Stir in the foamy egg whites slowly with the mascarpone batter
4. The fruit coulis is made out of red fruit and 25g sugar, blended to a smooth substance
5. To prepare the glasses, crumble the biscuits and put them on the bottom of each glass (keep some to decorate at the end), add a layer of fruit coulis, alternated with a layer of mascarpone and end with some biscuit crumbles
6. Let the dessert rest in the fridge during at least one hour
!! Make sure the eggs have not been in the fridge for a while before making this dessert as it might ruin the mascarpone batter.
Making the dessert the day before gives it even a better taste, a nicer blended combination of the different tastes. Enjoy!
5. To prepare the glasses, crumble the biscuits and put them on the bottom of each glass (keep some to decorate at the end), add a layer of fruit coulis, alternated with a layer of mascarpone and end with some biscuit crumbles
