Last week I flew back to Belgium to see my parents and my mum made potato waffles to go with some nice beef stew. I never had it before but it is a nice variation instead of having just mashed potatoes with your meal. It turns out as a crunchy potato with very little extra ingredients and what is great is that you do not really use any butter or oil to prepare them. So they are pretty healthy!
Potato waffles
4 Servings
Ingredients:
500g potatoes
25g flour
1egg
pepper and salt to taste
a pinch of nutmeg (optional)
a pinch of nutmeg (optional)
1. Peel, wash and boil the potatoes until they are done (more or less 15min)
2. Blend the potatoes until smooth
3. Stir in the flour, egg and seasoning
4. In the mean time, preheat the waffle iron and spray some oil in your non stick waffle iron
5. Once the iron is hot, pour in the appropriate amount of batter for your specific model. Close and cook until gently browned (around 3 to 5 minutes)
Once they are baked, you can keep them warm in the oven until you have baked them all and your meat or fish dish is ready to serve. Enjoy!

ReplyDeleteHi Sean, I have never tried buttermilk waffles, so I can't really tell. But potato waffles are more a substitute for mashed potatoes for ex. with any meat or fish dish really.

ReplyDeleteI like to make variations, add cheese, and/or onion. Sometimes I add sweet corn to the mashed potato mix as well. Kids love them too.
